🍖 Easy Slow Cooker Meatloaf with Brown Sugar Sauce

Ingredients

For the meatloaf

  • 2 lb (900 g) ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 2 large eggs
  • ½ cup milk
  • ¼ cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika

For the brown sugar sauce

  • ½ cup ketchup
  • ¼ cup packed brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon yellow mustard

Equipment

  • Slow cooker/crockpot, preferably 6-quart
  • Large mixing bowl
  • Small bowl
  • Aluminum foil or parchment paper

Step-by-Step Instructions

1. Prepare the slow cooker

Lightly spray the inside of your slow cooker with cooking spray. You can also line the bottom with a sheet of parchment paper or foil to make removing the meatloaf easier.

2. Make the meat mixture

In a large bowl, add the ground beef, chopped onion, garlic, breadcrumbs, eggs, milk, ketchup, Worcestershire sauce, salt, pepper, parsley, and paprika.

Mix everything gently with your hands or a large spoon until just combined.

Don’t overmix. Overmixing can make the meatloaf dense and tough.

3. Shape the meatloaf

Form the mixture into a loaf that will fit comfortably inside your slow cooker.

Try to make it fairly even in thickness so that it cooks evenly.

Place the shaped meatloaf into the slow cooker.

4. Make the brown sugar sauce

In a small bowl, combine:

  • Ketchup
  • Brown sugar
  • Apple cider vinegar
  • Worcestershire sauce
  • Yellow mustard

Stir until the brown sugar is mostly dissolved and the sauce is smooth.

The sauce should taste sweet, tangy, and slightly savory.

5. Add the sauce

Spread about half of the sauce evenly over the top of the raw meatloaf.

Reserve the remaining sauce for later.

6. Slow cook

Cover the slow cooker with the lid.

Cook on:

  • LOW: about 6–7 hours
  • HIGH: about 3–4 hours

Cooking time can vary depending on your slow cooker and the thickness of the meatloaf.

The most important thing is that the center reaches 160°F (71°C) on an instant-read thermometer.

7. Add more sauce

About 30 minutes before the meatloaf is finished, carefully spoon or brush the remaining brown sugar sauce over the top.

Cover and continue cooking.

This creates a delicious sticky glaze.

8. Rest the meatloaf

Once fully cooked, carefully lift the meatloaf from the slow cooker.

Let it rest for approximately 10–15 minutes before slicing.

Resting allows the juices to redistribute and helps the slices hold together.

9. Slice and serve

Using a sharp knife, cut the meatloaf into thick slices.

Spoon some of the extra sauce over each serving if desired.

🍽️ What to Serve With It

This meatloaf goes especially well with:

  • Mashed potatoes
  • Roasted potatoes
  • Green beans
  • Steamed broccoli
  • Corn
  • Glazed carrots
  • Dinner rolls
  • Macaroni and cheese

For a classic comfort-food dinner, serve it with creamy mashed potatoes and green beans.

⭐ Helpful Tips

Don’t use very lean beef. Ground beef around 80–85% lean gives the meatloaf better flavor and keeps it moist.

Don’t add water to the slow cooker. The meat and sauce will release plenty of moisture while cooking.

For easier removal: Make a foil sling by placing two long strips of foil across the bottom of the slow cooker before adding the meatloaf. Leave the ends sticking out over the sides, then use them as handles when the meatloaf is finished.

For a thicker, stickier glaze: After cooking, transfer some of the sauce to a small saucepan and simmer it for a few minutes until slightly thickened. Brush it over the sliced meatloaf.

Leftovers: Refrigerate leftovers in an airtight container for up to about 3–4 days. They can be reheated in the microwave or oven.
