🛒 Ingredients
For the Meatloaf
- 2 lb (900 g) ground beef, preferably 80–85% lean
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- ½ cup milk
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- 2 tablespoons fresh parsley, chopped
For the Cheese Filling
- 1½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 2 tablespoons cream cheese, optional
For the Glaze
- ½ cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
- 1 tablespoon mustard
- ½ teaspoon garlic powder
- Pinch of black pepper
👩🍳 Step-by-Step Instructions
1. Preheat the oven
Preheat your oven to 375°F (190°C).
Lightly grease a loaf pan or line a baking sheet with parchment paper.
For an especially flavorful crust, you can shape the meatloaf directly on a baking sheet instead of using a loaf pan.
2. Prepare the onion and garlic
Finely chop the onion and mince the garlic.
For a softer, sweeter onion flavor, sauté the onion in a teaspoon of oil over medium heat for about 4–5 minutes. Add the garlic during the final 30 seconds.
Allow them to cool slightly before adding them to the meat mixture.
3. Make the breadcrumb mixture
In a large bowl, combine:
- Breadcrumbs
- Milk
- Eggs
- Ketchup
- Worcestershire sauce
Let this mixture sit for about 2–3 minutes.
The breadcrumbs absorb the milk and help keep the meatloaf moist instead of dense and dry.
4. Add the meat and seasonings
Add the ground beef to the bowl.
Add:
- Cooked onion and garlic
- Salt
- Black pepper
- Italian seasoning
- Paprika
- Fresh parsley
Gently mix everything together with your hands or a large spoon.
Important: Don’t overmix. Mix just until the ingredients are evenly distributed. Overmixing can make the meatloaf tough.
5. Prepare the cheese
Combine the mozzarella and cheddar in a bowl.
You can also add a little cream cheese for an extra creamy filling.
Mozzarella gives you that classic stretchy cheese pull, while cheddar adds a stronger, richer flavor.
6. Form the meatloaf
Place about two-thirds of the meat mixture onto a sheet of parchment paper.
Shape it into a rectangle approximately 9 × 12 inches.
Leave some space around the edges.
7. Add the cheese
Sprinkle the cheese mixture down the center of the meat.
Try not to put cheese right against the edges because it can leak out during baking.
8. Roll and seal the meatloaf
Carefully bring the sides of the meat mixture over the cheese.
Use the parchment paper to help you shape and roll the meatloaf.
Pinch the seams together firmly so the cheese is completely enclosed.
Place the meatloaf seam-side down in your prepared pan or on your baking sheet.
Check the ends carefully and seal any openings where cheese might escape.
9. Prepare the glaze
In a small bowl, combine:
- ½ cup ketchup
- Brown sugar
- Worcestershire sauce
- Mustard
- Garlic powder
- Black pepper
Mix until smooth.
Taste the glaze and adjust it to your preference. Add a little more brown sugar if you like it sweeter or more mustard if you prefer extra tang.
10. Add the first layer of glaze
Spread about half of the glaze evenly over the top of the meatloaf.
Keep the remaining glaze for later.
11. Bake
Place the meatloaf in the preheated oven.
Bake for approximately 45 minutes.
Then remove it from the oven and spread the remaining glaze over the top.
Return it to the oven and continue baking for another 10–20 minutes, or until the center reaches 160°F (71°C).
Because ovens and meatloaf shapes vary, a meat thermometer is the best way to determine when it’s done.
12. Let it rest
Remove the meatloaf from the oven and allow it to rest for 10 minutes before slicing.
This is an important step. Resting allows the juices to redistribute and gives the melted cheese time to settle inside the loaf.
13. Slice and serve
Use a sharp knife to cut the meatloaf into thick slices.
You should see a beautiful layer of melted cheese running through the center.
Serve immediately while it’s hot and cheesy.
🍽️ Best Side Dishes
Cheesy meatloaf pairs especially well with:
- Creamy mashed potatoes
- Roasted vegetables
- Green beans
- Buttered corn
- Macaroni and cheese
- Garlic bread
- Creamed spinach
- Simple green salad
For the ultimate comfort-food dinner, serve it with mashed potatoes and roasted green beans, then spoon some of the meatloaf glaze over the potatoes.
💡 Tips for the Best Cheesy Meatloaf
Use 80–85% lean beef: A little fat keeps the meatloaf juicy. Very lean beef can produce a dry loaf.
Don’t overmix: Mix only until everything comes together.
Seal the cheese inside: Make sure there are no gaps or cracks around the cheese filling.
Don’t skip the resting period: Cutting immediately can cause the juices and cheese to run out.
Use a thermometer: The safest and most reliable way to check doneness is to make sure the center reaches 160°F (71°C).
Experiment with cheese: Try mozzarella, cheddar, Monterey Jack, pepper Jack, provolone, or a combination.
🧀 Easy Variation
For a smoky version, add ½ teaspoon smoked paprika to the meat mixture and replace some of the cheddar with smoked cheddar.
For a spicy version, use pepper Jack cheese and add a pinch of red pepper flakes.
For a bacon-cheese version, add cooked, crumbled bacon to the cheese filling.
