π Ingredients
For the meatloaf
- 2 lb (900 g) ground beef β 80/20 is ideal
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 cup breadcrumbs
- 2 large eggs
- Β½ cup milk
- ΒΌ cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon yellow mustard
- 1Β½ teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried Italian seasoning
- 2 tablespoons chopped fresh parsley, optional
For the brown sugar glaze
- Β½ cup ketchup
- ΒΌ cup packed brown sugar
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
π¨βπ³ Step-by-Step Instructions
1. Preheat the oven
Preheat your oven to 375Β°F (190Β°C).
Line a baking sheet or loaf pan with parchment paper or lightly grease it.
Tip: A baking sheet gives the meatloaf more surface area and allows excess fat to drain away. A loaf pan produces a more traditional, compact shape.
2. Prepare the onion
Finely chop the onion.
For an especially tender and flavorful meatloaf, sautΓ© the onion in a small amount of oil over medium heat for about 5β7 minutes, until soft and translucent.
Add the minced garlic during the final 30β60 seconds.
Remove from the heat and allow the mixture to cool slightly.
Why do this? Raw onion can sometimes remain crunchy inside the meatloaf. SautΓ©ing it first makes the finished meatloaf softer and sweeter.
3. Make the breadcrumb mixture
In a large bowl, combine:
- 1 cup breadcrumbs
- Β½ cup milk
- 2 eggs
- ΒΌ cup ketchup
- 2 tablespoons Worcestershire sauce
- 1 tablespoon mustard
Stir everything together and let it sit for about 5 minutes.
The breadcrumbs will absorb the milk and form a soft mixture.
This helps keep the meatloaf moist and tender instead of dense and dry.
4. Add the meat and seasonings
Add the ground beef to the bowl.
Then add:
- Cooked onion and garlic
- Salt
- Black pepper
- Smoked paprika
- Italian seasoning
- Parsley, if using
5. Mix gently
Using clean hands or a large spoon, gently mix everything together until the ingredients are evenly distributed.
Do not overmix.
This is one of the most important steps.
If you knead the meat mixture too aggressively, the proteins become tightly bound and your meatloaf can turn out tough, rubbery, or dense.
Mix just until everything comes together.
6. Shape the meatloaf
Transfer the mixture to your prepared baking sheet or loaf pan.
Shape it into a loaf approximately:
9 Γ 5 inches (23 Γ 13 cm)
If using a baking sheet, make sure the loaf has a slightly rounded top.
Don’t pack it down too tightly.
π― 7. Make the brown sugar glaze
In a small bowl, combine:
- Β½ cup ketchup
- ΒΌ cup brown sugar
- 2 tablespoons yellow mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon Worcestershire sauce
Mix until smooth.
Taste the glaze.
You should get a combination of:
sweet + tangy + savory + slightly smoky.
If you prefer a sweeter glaze, add another tablespoon of brown sugar.
8. Add the first layer of glaze
Spread approximately half of the glaze evenly over the top of the raw meatloaf.
Reserve the remaining glaze for later.
The glaze will begin caramelizing as the meatloaf cooks.
9. Bake the meatloaf
Place the meatloaf in the preheated 375Β°F (190Β°C) oven.
Bake for approximately 45 minutes.
At this point, remove it from the oven and spread the remaining glaze over the top.
Return it to the oven.
10. Finish baking
Continue baking for another 15β25 minutes, depending on the size and shape of your meatloaf.
The most reliable way to know when it’s finished is to use an instant-read thermometer.
The center should reach 160Β°F (71Β°C) for ground beef.
Don’t rely only on the outside appearanceβthe meatloaf can look beautifully browned while the center still needs more cooking.
11. Let it rest
Remove the finished meatloaf from the oven.
Let it rest for 10β15 minutes before slicing.
This is important because resting allows the juices to redistribute throughout the meat.
If you cut it immediately, more of those juices can run onto the cutting board instead of staying inside the meatloaf.
πͺ 12. Slice and serve
Use a sharp knife to cut the meatloaf into thick slices.
Serve warm with some of the extra glaze or pan juices spooned over the top.
The finished meatloaf should have:
- A caramelized, sticky glaze
- A juicy, tender center
- A savory beef flavor
- Soft onions throughout
- Slight sweetness from the brown sugar
- A pleasant tang from ketchup, mustard, and vinegar
π₯ Best Side Dishes
Classic American sides work especially well:
- Creamy mashed potatoes
- Green beans
- Roasted carrots
- Corn on the cob
- Macaroni and cheese
- Steamed broccoli
- Dinner rolls
- Creamed spinach
For the ultimate comfort-food plate, I’d serve it with mashed potatoes + green beans + warm dinner rolls.
β Important tips for the best meatloaf
Use 80/20 ground beef: The extra fat helps keep the meatloaf juicy.
Don’t overmix: Gentle mixing gives you a tender texture.
SautΓ© the onion: This produces a softer texture and deeper flavor.
Don’t skip the milk: It helps hydrate the breadcrumbs and keeps the loaf moist.
Glaze twice: The first layer cooks into the meatloaf; the second creates that glossy, caramelized topping.
Use a thermometer: Cook until the center reaches 160Β°F (71Β°C).
Rest before slicing: Give it 10β15 minutes so the juices settle.
For leftovers: Refrigerate in a covered container for up to about 3β4 days. Meatloaf also freezes very well when tightly wrapped.
